Food design and characterization
Design of food tailor made to meet the nutritional, sensory and convenience needs of specific groups of consumers. Food development is carried out with attention to the use of sustainable food sources and sustainable processing. Evaluation of the effect of composition and processing on the acceptability, quality and stability of complex food with a multi-dimensional and multi-analytical approach.
